Strawbeany Ice Cream

We are into trying new healthy weird recipes lately, so I thought I'd share our experiments. This was suppose to be Strawberry Ice Cream, but I miss the part about letting it freeze for 8 hours! ha ha... Since the kids couldn't wait, we ate it like a yogurt with fresh strawberries. It was a little weird, but the kids LOVED it. To understand the weridness check out the ingredients. Here is the recipe.

Strawbeany Ice Cream

1 cup medjool dates, pitted
1 cup frozen strawberries
1/2 cup raw cashews
7-ounces pinto beans drained
1 teaspoon vanilla
2 1/2 cups water
1 cup sliced fresh organic strawberries, divided (1/2 cup optional)

To make ice cream: blend dates, frozen strawberries, cashews, beans, vanilla, and water in a Vita-Mix or other powerful blender until well blended.

Pour into a bowl and stir in 1/2 cup sliced fresh strawberries. Cover and freeze for about 8 hours until almost set.

May be served as is or layered with the berries in a parfait glass.

Note: If ice cream becomes too soft you may re-freeze until it hardens slightly.
