Recipe

People ask me all the time, "So what does a vegan eat?" As I was going through my recipes, I came across an oldie, but a goodie. Here is an example of what the Reederbunch will be having for dinner. Tonight on the menu... Chinese Food.

Mixed Chinese Veggies- Quick and Easy these are frozen
Dried Chickpeas- Yes, I soaked and cooked these
Brown Rice- This will be served on the side for the kiddos
(we are out of cauliflower)

And the MOST important ingredient...

Teriyaki Sauce

3 oz. Braggs Liquid Amino Acids (or you can use soy sauce)
12 oz. Unsweetened Pineapple Juice
1 Tablespoon Grated Fresh Ginger
1 Teaspoon Minced Garlic
(0ptional)
1/4 Teaspoon Crushed Red Peppers (this adds a kick)

Put all ingredients into a saucepan, get it hot...

Separately mix...
6oz Cold Water
2 Tablespoons Cornstarch

Then add to saucepan.

Wait until it boils for 15 seconds, it will start to stick as cornstarch thickens.

Remove from heat and serve!!! Yummy!

Warning... I normally don't use the crushed red peppers, because of the kids. Today I did, and I forgot how hot it makes it! Wow, it was spicy! I let the children taste and now they can't wait until dinner time!

Rice Substitute



I just tried this and it tastes great!!! So as a substitute for rice, I discovered cauliflower. Some times I just can't wait 45 for brown rice. I can't tell you how many times Chris asks, if dinner is ready, what are we waiting on? My answer... The Rice! Yesterday, cauliflower was on sale at the grocery store, so I picked up two heads and threw them in my food processor on the grater blade. Later, when I was a little hungry. I put a cup of rice like cauliflower in the microwave (I know most of my friends think that is a bad word) for 2 mins. Yum! I added a little Bragg's Liquid Amino Acids. (a soy sauce substitute, if you never heard of it check it out here... http://www.bragg.com/products/la.html) I can't wait to make Chinese food w/ cauliflower "rice".

Homemade Sauerkraut


This week I made raw sauerkraut for the first time. You shred cabbage, add a little salt, and put in a jar and wait 3-5 days. Homemade Raw Sauerkraut.

VBS







This past week was VBS. I worked in the nursery since, well, three of my children were in there. Zoe is 3, Elijah is 2, and Hannah will soon be 1. The rest of the children were all in different classes. Here are a few photos I took of nursery class. I didn't get any shots of the others. But they all had a ton of FUN!!!

Toe Nails


Last week we decided to paint toe nails. It was Hannah's first time having her nails painted. The girls were sitting in a circle talking about their toes. I snapped a photo!

Tie Dye









Yes... It's that time of year again! Tie Dye Time!!! Every summer the Holly Springs Library has tie dye day! (most of the children were wearing last years shirts to this years tie dye)

You bring a white t-shirt and the library provides the rest. The best part... the mess stays at the library! Each child tied their shirt with a little help from mommy, then the shirts get soaked in soda ash, and then it's tie dye time. This year I forgot one thing, the gloves! They were laying for anyone to use, however, I was so busy taking pictures, I forgot to tell the children to grab a pair. By the end, Caleb hands looked like the hulk! But it only took a few days to wear off. Enjoy the photos!

New Bikes for Grace and Elijah







A few weeks ago, Chris and I decided to buy both Grace and Elijah new bikes. Grace got a cute new Trek and Elijah got a strider. If you never heard of a strider you can visit their website http://stridersports.com/ After only a couple weeks, Grace was riding her two wheeler like a pro. We are so proud of you Grace!!! Elijah also loves his new bike. Here are a few photos of the children on their new bikes! (I know, Elijah forgot his helmet. After these photos were taken, he put one on!)

Going Bananas!!!




One of our families favorites are dehydrated bananas. When our local grocery store has discounted bananas, we literally fill a cart full of bananas. Take them home and start dehydrating. Chris' job is peeling the bananas. My job is cutting the bananas and the children's job is to lay all the bananas out on the dehydration trays. Everyone helps out! Enjoy the photos.

Neglect

Yes, I have been neglecting my blog. Sorry everyone. Summer is busy! Last week was VBS which makes the week even crazier, but also Chris was in Atlanta, GA to top it off. Needless to say... my blog has been neglected. But have no worries, here come some posts!

Reeder Baby No. 7


Yesterday was my first ultrasound for Reeder Baby No. 7. There was only one baby in there, and it is still too early to tell the gender, but we enjoyed seeing our little peanut floating around in there. The tech said everything looks great and the heart beat is great. The baby is the perfect size for our due date of Feb. 23, 2010.
